This hearty Keto Cheesy Meatball Casserole is packed with flavor and topped with gooey cheese. It’s a fantastic, low-carb dish that’s perfect for lunch, dinner, or meal prepping!

Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Casserole:

  • 1 1/2 cups marinara sauce (make sure it’s sugar-free and keto-friendly)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil (for cooking the meatballs)
  • Fresh basil (optional, for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Make the Meatballs:

    • In a large bowl, combine the ground beef, grated Parmesan, almond flour, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix everything until it’s well incorporated.
    • Form the mixture into small meatballs, about 1 inch in diameter.
  3. Cook the Meatballs:

    • Heat the olive oil in a large skillet over medium heat.
    • Add the meatballs and cook them for 3-4 minutes on each side until browned. You don’t need to cook them all the way through since they will finish cooking in the oven.
  4. Assemble the Casserole:

    • In a baking dish, spread about 1/2 cup of the marinara sauce on the bottom.
    • Arrange the meatballs on top of the sauce in a single layer.
    • Pour the remaining marinara sauce over the meatballs, covering them evenly.
    • Sprinkle the shredded mozzarella and grated Parmesan over the top.
  5. Bake:

    • Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  6. Garnish and Serve:

    • Remove the casserole from the oven and let it cool slightly.
    • Garnish with fresh basil if desired.
    • Serve hot and enjoy!
